Mango Salsa

Ingredients:
1 medium mango, peeled and chopped
½ cup chopped, seeded tomatoes
½ cup chopped red onion
½ cup chopped, peeled cucumber
2 Tbl minced fresh cilantro
1 Tbl olive oil
¼ cup lime juice, or about the juice of one lime

1. Combine all ingredients.
2. Cover and refrigerate until serving.

Goes great with the Italian Roasted Pork Tenderloin!
