Baked Potato Soup

Ingredients:
5 large baking potatoes, baked
¼ cup butter
1 medium onion, chopped
1/3 cup all-purpose flour
2 cups cream (or sour cream)
5 cups milk
1 tsp salt
¼ tsp pepper
2 cups shredded cheese (trappista or other favorite)
8 bacon slices, cooked and crumbled (optional)

Directions:
1. Peel potatoes, coarsely mash with fork.
2. Melt butter in a sauce pan over medium heat. Add onion and saute until tender. Add flour, stirring until smooth.
3. Stir in potatoes, milk, cream, and next 3 ingredients. Cook over low heat until thoroughly heated.
4. Top each serving with cheese, bacon, and chives!

Yield: 12 cups
